Ingredients

  • 500 g Green beans trimmed
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 clove Garlic minced
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. 1. Bring a pot of water to a boil. Add green beans and cook for 3-5 minutes until tender-crisp. Drain and rinse under cold water to stop cooking.
  2. 2. In a large bowl, combine the green beans, cherry tomatoes, and red onion.
  3. 3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and black pepper.
  4. 4. Pour the dressing over the vegetables and toss to coat evenly. Serve chilled.
