Crust
- 1.5 cups Graham cracker crumbs
- ¼ cup Sugar
- ½ cup Butter, melted
Filling
- 4 packages Cream cheese, softened 8 oz each
- 1 cup Sugar
- 1 teaspoon Vanilla extract
- 4 Eggs large
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of a springform pan.
In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, beating well after each addition.
Pour the filling over the crust in the springform pan.
Bake for 60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
Chill in the refrigerator for at least 4 hours before serving.
