Ingredients 

Main Ingredients

  • 3 lbs Beef Chuck Roast cut into chunks
  • 3 pcs Chipotle Peppers in Adobo Sauce canned
  • 1 tablespoon Ground Cumin
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 4 cloves Garlic minced
  • ¼ cup Apple Cider Vinegar
  • ½ cup Beef Broth
  • 2 pcs Bay Leaves

Instructions 

  1. 1. Blend chipotle peppers, cumin, oregano, salt, black pepper, garlic, apple cider vinegar, and beef broth until smooth.
  2. 2. Place beef chunks in a slow cooker. Pour blended mixture over the beef. Add bay leaves.
  3. 3. Cook on low for 8 hours or until beef is tender and easily shredded.
  4. 4. Remove bay leaves. Shred the beef with two forks and mix with the sauce.
  5. 5. Serve hot with tortillas, rice, or your favorite sides.
