Ingredients 

Main Ingredients

  • 2 cups Cooked rice preferably day-old
  • 1 cup Cooked chicken diced
  • 2 tablespoon Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 cup Mixed vegetables frozen or fresh
  • 2 Eggs beaten
  • 2 tablespoon Vegetable oil
  • 2 cloves Garlic minced
  • 1 Onion small, diced
  • 2 stalks Green onions chopped

Instructions 

  1. Heat 1 tablespoon of oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove and set aside.
  2. In the same wok, add the remaining oil. Sauté the garlic and onion until fragrant.
  3. Add the mixed vegetables and cook for 2-3 minutes.
  4. Add the cooked chicken and stir-fry for another 2 minutes.
  5. Add the cooked rice, soy sauce, and oyster sauce. Stir well to combine.
  6. Return the scrambled eggs to the wok and mix everything together. Cook for another 2 minutes.
  7. Garnish with chopped green onions and serve hot.
