Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans, drained and rinsed (15 oz)
  • 1 cup beef broth
  • 1 tablespoon tomato paste

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute.
  3. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  4. Stir in the chili powder, ground cumin, paprika, cayenne pepper, dried oregano, salt, and black pepper. Cook for 1-2 minutes until fragrant.
  5. Add the diced tomatoes, kidney beans, beef broth, and tomato paste. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary. Serve hot.
