- 2 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 lb ground beef
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 0.5 teaspoon cayenne pepper
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans, drained and rinsed (15 oz)
- 1 cup beef broth
- 1 tablespoon tomato paste
Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
Stir in the chili powder, ground cumin, paprika, cayenne pepper, dried oregano, salt, and black pepper. Cook for 1-2 minutes until fragrant.
Add the diced tomatoes, kidney beans, beef broth, and tomato paste. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes, stirring occasionally.
Taste and adjust seasoning if necessary. Serve hot.
