Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook until softened, about 5 minutes.
Stir in garlic, thyme, parsley, and bay leaf. Cook for another minute.
Pour in chicken broth and bring to a boil.
Reduce heat and simmer for 15 minutes.
Add shredded chicken and cooked rice. Simmer for another 5 minutes.
Season with salt and pepper to taste. Remove bay leaf before serving.
