Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 6 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup cooked rice
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic, thyme, parsley, and bay leaf. Cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add shredded chicken and cooked rice. Simmer for another 5 minutes.
  7. Season with salt and pepper to taste. Remove bay leaf before serving.
