Chicken and Gnocchi Soup

Main Ingredients
- 2 cups Cooked Chicken, shredded
- 1 package Gnocchi (about 16 oz)
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 cup Onion, diced
- 4 cups Chicken Broth
- 2 cups Spinach, chopped
- 1 cup Heavy Cream
- 2 tablespoon Olive Oil
- 2 cloves Garlic, minced
- to taste Salt and Pepper
1. Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
2. Add minced garlic and cook for another minute.
3. Pour in the chicken broth and bring to a boil.
4. Add the gnocchi and cook until they float to the top, about 3-4 minutes.
5. Stir in the shredded chicken, spinach, and heavy cream. Cook until heated through.
6. Season with salt and pepper to taste. Serve hot.
