Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 can crushed tomatoes (400g)
  • 4 eggs
  • to taste salt and pepper
  • 1 tablespoon fresh parsley, chopped for garnish

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and red bell pepper. Cook until softened, about 5 minutes.
  3. Add the minced garlic, ground cumin, paprika, and ground coriander. Cook for another minute.
  4. Pour in the crushed tomatoes and simmer for 10 minutes, until the sauce thickens.
  5. Make four small wells in the sauce and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
  7. Season with salt and pepper to taste, and garnish with chopped parsley.
