Main Ingredients
- 4 cups carrots, grated
- ¼ cup raisins
- 2 tablespoons lemon juice freshly squeezed
- 1 tablespoon olive oil
- 1 teaspoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper freshly ground
1. Grate the carrots and place them in a mixing bowl.
2. Add the raisins, lemon juice, olive oil, honey, salt, and black pepper to the bowl.
3. Toss everything together until well combined.
4. Serve immediately or chill in the fridge for 30 minutes before serving.
