Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup chopped walnuts

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Beat in the eggs, one at a time, then stir in the oil. Fold in the carrots and walnuts.
  4. Pour batter into prepared pan. Bake in preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
