- ½ cup unpopped popcorn kernels
- 1 cup brown sugar packed
- ¼ cup light corn syrup
- ½ cup butter unsalted
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ½ teaspoon vanilla extract
Preheat oven to 250°F (120°C). Pop the popcorn and place it in a large bowl.
In a saucepan, combine brown sugar, corn syrup, butter, and salt. Bring to a boil over medium heat, stirring constantly. Boil without stirring for 4-5 minutes.
Remove from heat and stir in baking soda and vanilla extract. Pour over popcorn and stir to coat evenly.
Spread the coated popcorn onto a baking sheet. Bake for 45 minutes, stirring every 15 minutes.
Remove from oven and let cool completely before breaking into pieces.
