  • 1 can Black beans drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Salsa
  • 4 Tortillas large
  • 1 cup Shredded cheese cheddar or Mexican blend
  • 1 Avocado sliced
  • 1 Lime cut into wedges

Instructions 

  1. Heat the skillet over medium heat.
  2. Add the black beans and corn to the skillet. Cook for 5 minutes, stirring occasionally.
  3. Stir in the salsa and cook for another 2-3 minutes until heated through.
  4. Warm the tortillas in a separate pan or microwave.
  5. Assemble the burritos by placing the bean mixture, cheese, and avocado slices on each tortilla. Roll up and serve with lime wedges.
