Ingredients 

Birria

  • 2 lbs Beef chuck roast
  • 4 cups Beef broth
  • 2 Dried guajillo chiles seeded
  • 2 Dried ancho chiles seeded
  • 1 Onion chopped
  • 4 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 Bay leaves
  • to taste Salt

Tacos

  • 12 Corn tortillas
  • 2 cups Shredded cheese like Oaxaca or mozzarella
  • 1 cup Chopped cilantro
  • 1 cup Diced onions

Instructions 

  1. 1. In a large pot, combine beef, broth, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, bay leaves, and salt. Bring to a boil, then reduce heat and simmer for 3 hours.
  2. 2. Remove the beef and shred it. Blend the remaining broth and solids until smooth to make the birria sauce.
  3. 3. Dip tortillas in the birria sauce, then cook on a skillet. Add shredded beef and cheese, fold, and cook until crispy.
  4. 4. Serve tacos with chopped cilantro and diced onions.
