Main Ingredients
- 4 medium beets
- ¼ cup olive oil
- 2 tablespoon balsamic vinegar
- ¼ cup chopped walnuts
- ¼ cup crumbled goat cheese
- Salt and pepper to taste
Preheat oven to 400°F (200°C).
Wrap beets in aluminum foil and roast for 45 minutes or until tender.
Let beets cool, then peel and slice them.
