Ingredients 

Main Ingredients

  • 3 lb beef chuck roast
  • 2 cups beef broth
  • 1 cup red wine optional
  • 4 cloves garlic minced
  • 1 onion chopped
  • 4 carrots cut into chunks
  • 4 potatoes cut into chunks
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 sprigs rosemary
  • 2 sprigs thyme

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned.
  3. Remove the roast and set aside. In the same pot, sauté the onions and garlic until softened.
  4. Return the roast to the pot. Add beef broth, red wine, carrots, potatoes, rosemary, thyme, salt, and pepper.
  5. Bring to a simmer, cover, and transfer to the preheated oven. Cook for about 4 hours, or until the meat is tender.
  6. Remove from oven and let rest for a few minutes before serving.
