- 1 lb Ground beef
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Enchilada sauce
- 8 pieces Tortillas
- 2 cups Cheddar cheese, shredded
- 1 cup Sour cream
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
Stir in ½ cup of enchilada sauce into the beef mixture.
Fill each tortilla with the beef mixture and roll up. Place seam-side down in a baking dish.
Pour remaining enchilada sauce over the top of the rolled tortillas.
Sprinkle shredded cheddar cheese over the top.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
Serve with sour cream on the side.
