Ingredients 

Main Ingredients

  • 1 lb Ground beef
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Enchilada sauce
  • 8 pieces Tortillas
  • 2 cups Cheddar cheese, shredded
  • 1 cup Sour cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
  4. Stir in ½ cup of enchilada sauce into the beef mixture.
  5. Fill each tortilla with the beef mixture and roll up. Place seam-side down in a baking dish.
  6. Pour remaining enchilada sauce over the top of the rolled tortillas.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  9. Serve with sour cream on the side.
