Main Ingredients
- 2 kg beef bones preferably with marrow
- 2 large carrots chopped
- 2 stalks celery chopped
- 1 large onion quartered
- 4 cloves garlic smashed
- 2 tablespoon apple cider vinegar
- 1 teaspoon salt to taste
- 1 teaspoon pepper to taste
- 3 liters water enough to cover
1. Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for 30 minutes.
2. Transfer the roasted bones to a large stockpot. Add the carrots, celery, onion, garlic, apple cider vinegar, salt, and pepper.
3. Pour in enough water to cover the bones and vegetables. Bring to a boil, then reduce the heat to a simmer.
4. Simmer for at least 8 hours, skimming off any foam or fat that rises to the surface.
5. Strain the broth through a fine-mesh strainer and discard the solids. Let the broth cool, then refrigerate or freeze for later use.
