Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 can Kidney Beans drained and rinsed
  • 1 can Garbanzo Beans drained and rinsed
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Olive Oil
  • 2 tablespoon Red Wine Vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. In a large mixing bowl, combine black beans, kidney beans, garbanzo beans, cherry tomatoes, cucumber, and red onion.
  2. 2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
  3. 3. Pour the dressing over the bean mixture and toss to coat.
  4. 4. Garnish with fresh parsley before serving.
