Ingredients 

Main Ingredients

  • 4 Poblano Peppers roasted and peeled
  • 200 g Cheese Oaxaca or Monterey Jack, shredded
  • 3 Eggs separated
  • ½ cup All-purpose Flour
  • 1 cup Vegetable Oil for frying

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Roast the poblano peppers until charred, then peel off the skins.
  3. Make a small slit in each pepper and remove the seeds.
  4. Stuff each pepper with shredded cheese.
  5. Beat egg whites until stiff peaks form, then fold in the yolks.
  6. Coat each stuffed pepper in flour, then dip in the egg mixture.
  7. Heat oil in a frying pan over medium heat. Fry each pepper until golden brown.
  8. Place fried peppers on a baking sheet and bake for 10 minutes.
