Instructions
Boil potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
In a skillet, cook bacon until crispy. Remove bacon and set aside, leaving drippings in the skillet.
Add onions to the skillet and cook until tender.
Stir in vinegar, water, sugar, mustard, salt, and pepper. Bring to a boil.
Pour the hot dressing over the potatoes. Add bacon and parsley. Toss gently to combine.
Serve warm.
