Crust
- 2.5 cups all-purpose flour
- 1 cup unsalted butter cold and cubed
- 1 teaspoon salt
- ¼ cup ice water
Filling
- 6 cups apples peeled, cored, and sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar packed
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoon all-purpose flour
- 1 tablespoon lemon juice
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine flour and salt for the crust. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until the dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap and refrigerate for 1 hour or overnight.
On a lightly floured surface, roll out one half of the dough to fit a 9-inch pie dish. Transfer dough to pie dish. Trim even with edge. Add apple mixture to the crust.
Roll out remaining dough to fit top of pie; place over filling. Trim, seal, and flute edges. Cut slits in top. Bake 45-50 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.
