Ingredients 

Meatballs

  • 1 lb Ground Beef
  • 1 cup Cooked Rice
  • 1 Egg beaten
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Soup

  • 8 cups Beef Broth
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced
  • 1 cup Zucchini sliced
  • 1 can Tomatoes diced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano

Instructions 

  1. In a mixing bowl, combine ground beef, cooked rice, beaten egg, minced garlic, salt, and black pepper. Mix well and form into small meatballs.
  2. In a large pot, bring beef broth to a boil. Add the meatballs and reduce heat to a simmer. Cook for 20 minutes.
  3. Add the sliced carrots, diced potatoes, sliced zucchini, diced tomatoes, cumin, and oregano to the pot. Continue to simmer for another 25 minutes, or until vegetables are tender.
  4. Serve hot and enjoy!
