Al Kabsa Traditional Saudi Rice and Chicken Recipe

Main Ingredients
- 1.5 kg Chicken, cut into pieces
- 2 cups Basmati rice rinsed and soaked
- 3 tablespoon Vegetable oil
- 2 Onions, finely chopped
- 3 Tomatoes, chopped
- 4 cloves Garlic, minced
- 2 tablespoon Tomato paste
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1 teaspoon Ground cinnamon
- 1 teaspoon Ground black pepper
- 1 teaspoon Ground turmeric
- 1 teaspoon Ground cardamom
- 1 teaspoon Ground cloves
- 1 teaspoon Salt
- 3 cups Chicken broth
- 1 Bay leaf
- ½ cup Raisins
- ½ cup Slivered almonds, toasted
- ¼ cup Fresh cilantro, chopped
Heat the oil in a large pot over medium heat. Add the onions and cook until golden brown.
Add the garlic and cook for another minute.
Add the chicken pieces and cook until they are browned on all sides.
Add the tomatoes, tomato paste, and all the spices. Stir well to combine.
Pour in the chicken broth, add the bay leaf, and bring to a boil. Reduce the heat and let it simmer for about 30 minutes.
Add the rice, raisins, and salt. Stir well and cover the pot. Cook on low heat for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
Remove from heat and let it sit for 10 minutes. Fluff the rice with a fork.
Garnish with toasted almonds and fresh cilantro before serving.
