Acini di Pepe Salad Recipe

Main Ingredients
- 1 cup Acini di Pepe pasta
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ½ cup Red onion, finely chopped
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 teaspoon Dried oregano
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Cook the Acini di Pepe pasta according to the package instructions. Drain and rinse under cold water.
In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
Pour the dressing over the pasta and vegetables. Toss to combine.
Chill in the refrigerator for at least 30 minutes before serving.
